boondi recipe | kara boondi recipe | how to make khara boondi with step by step photo and video recipe. while kara boondi recipe is extremely simple, but the consistency plays important role shaping the boondi pearls. it is recommended to check the consistency before deep frying by dropping few to hot oil. it should not be pointy or flat which means it is watery and requires more besan.
it is a common practice in south india to share savouries with each diwali sweet gift box. the most common savouries found on these boxes are either kara boondi or roasted cashews. the whole idea is to balance the taste of the gift box and not to overpower with just sweets. whereas i generally prepare these boondi pearls for my day to day evening munching snacks with a cup of masala chai. i even extend the same recipe by mixing it with roasted cashews and plain sev. further i even add the same kara boondi to my raita to prepare boondi raita. typically the raita is prepared from plain boondi’s but it tastes great with kara boondi too.
while the recipe is extremely simple, yet i would like to share some tips and recommendations for a perfect kara boondi recipe. firstly, adjust the consistency of besan batter as it plays a major role in getting round shaped pearls. also whisk the batter well without forming any lumps else it will be difficult to pass in the ladle. finally, drain off the boondi onto kitchen towel else, boondi will be oily.

Ingredients
- 1 cup besan / gram flour
- 2 tbsp rice flour
- ¼ tsp turmeric / haldi
- ½ tsp kashmir red chilli powder / lal mirch powder
- pinch of hing / asafoetida
- ¼ tsp baking soda
- ½ tsp salt
- water as required
- oil for deep frying
Instructions
firstly, in a large mixing bowl take 1 cup besan and 2 tbsp rice flour.
also add ¼ tsp turmeric, ½ tsp chilli powder, pinch of hing, ¼ tsp baking soda and ½ tsp salt.
now add water and prepare a thick batter.
directly into hot oil, take small holes perforated spoon and pour besan batter.
fry golden and crisp. also fry cashews and curry leaves.
finally, mix everything and serve khara boondi.

how to make kara boondi with step by step photo:
- firstly, in a large mixing bowl take1 cup besan and 2 tbsp rice flour.
- also add¼ tsp turmeric, ½ tsp chilli powder, pinch of hing, ¼ tsp baking soda and ½ tsp salt.
- mix well making sure all the spices are combined well with besan.
- now add ½ cup of water and whisk smooth without forming any lumps.
- add more water as required and prepare a thick flowing consistency batter.
- directly into hot oil, take small holes perforated spoon and pour prepared besan batter.
- slowly tap with the help of spoon, making sure the drops of besan fall into oil.
- do not over crowd the boondis in oil.
- stir occasionally and once they are golden and crisp, take off and drain over the kitchen paper towel.
- also fry cashews and curry leaves.
- finally, mix everything and serve khara boondi or store in airtight container once cooled completely.
notes:
- firstly, adjust the consistency of besan batter by adding water as required.
- also vary the amount of spices while adding to the batter.
- fry in hot oil, else boondi will turn flat and wont be crispy.
- finally, adding soda is optional however it helps khara boondi to make more crispy and round.
