In my house, bagels aren’t just for breakfast. This Chicken Cordon Bleu Casserole is hearty, flavorful, and incredibly easy to make. Serve with a side salad to make the meal complete!

I’m a big fan of baked main dishes, especially when feeding a crowd. You can usually prep them ahead of time… so when your guests arrive you can focus on them instead of disappearing into your kitchen. Other favorites include Mexican Street Corn Casserole, my Yellow Squash Casserole with Shredded Chicken, and this Cheesy Hamburger and Rice Casserole.

INGREDIENTS FOR CORDON BLUE CASSEROLE:

I absolutely love the texture of this meal. By utilizing day old bagels that are ripped apart and toasted, this allows the bread bits to soak up the custard while still remaining crispy around the edges. Mmmm. Here’s everything you’ll need:

While I used plain bagels for this recipe, you can certainly mix things up and swap those out for a flavored variety like onion, asiago, everything, poppyseed, or parmesan.

MORE INGREDIENT OPTIONS:

  • HAM: Once cubed, I add these little gems straight into the casserole dish. However, you could also brown them in a skillet first for an extra depth of flavor. Don’t have ham steaks on hand? Feel free to use Canadian bacon, regular cooked bacon, or even crumbled sausage. While those ingredients aren’t traditional, they’re still tasty.
  • TOMATOES, ONIONS, AND/OR PEPPERS: If you’re wanting to add a fresh element, these three items play well with the other ingredients in this dish.
  • CHEESE:While I prefer the blend of Swiss and Monterey Jack, you could also use Havarti, Jarlsberg, white cheddar, or any melty variety you enjoy most is equally as delicious.

In my house, bagels aren't just for breakfast. This Chicken Cordon Bleu Casserole is hearty, flavorful, and incredibly easy to make.

Serves: 6

Ingredients

  • 4 Bagels
  • 4 Eggs
  • 1¼ cups Half and Half
  • 1 tsp. Kosher Salt
  • ½ tsp. Black Pepper
  • 1 tbsp. Dijon Mustard
  • ½ tsp. Worcestershire Sauce
  • 1 tsp. Garlic Powder
  • ½ tsp. Fresh Thyme Leaves
  • 1 cup Shredded Swiss Cheese
  • 1 cup Shredded Monterey Jack Cheese
  • 2 Chicken Breasts, seasoned, cooked, and chopped
  • 2 oz. Ham Steak, chopped into cubes
  • Scallions and Italian Parsley, chopped for garnish

Instructions

  1. Cut or rip apart the bagels into bite-sized chunks. Preheat the oven to 350F and bake the chunks on a cookie sheet for 10 minutes. Remove from the oven and set aside.
  2. Whisk together the eggs, half and half, salt, pepper, Dijon, Worcestershire, garlic powder, and fresh thyme to create a custard.
  3. Add the toasted bagels to a large, greased casserole dish. Pour over the custard and mix together with half the Swiss, half the Monterey Jack, cooked chicken breasts, and ham. Allow to sit for at least two hours to allow the bread to absorb most of the custard.
  4. Preheat the oven to 375F. Cover the casserole with foil and bake for 20 minutes. Remove the foil and continue to bake for an additional 20 minutes.
  5. Allow the casserole to rest for 10 minutes, then sprinkle with sliced scallions and Italian parsley for garnish.

NOTES ON THIS RECIPE:

  • I seasoned the chicken with simply salt and pepper, but feel free to use whatever seasoning you enjoy most. I tossed mine on the grill, but you could also cook them in a skillet, bake them in the oven, or utilize your air fryer. Just make sure the chicken has reached 165F before chopping!
  • Speaking of chicken, I used the chicken breast in this recipe. However, you a swap those out for thighs or even Springer Mountain Farms fully cooked and breaded varieties! All of their products are gluten-free, family owned, and American Humane Certified.
  • A fresh green salad alongside makes this meal complete. This Creamy Italian Dressing with shredded lettuce is my favorite.
  • Store any leftovers in a covered container, refrigerated, and enjoy within 2 days.
