  • Store these energy balls in an airtight container or ziploc bag in your fridge for up to a week. The balls will harden when chilled and you can soften them by taking them out a few minutes before eating them to let them come to room temperature.

What’s the best way to form your energy bites?

  • Use a large cookie scoop or spoon to create balls that are about 1” in diameter. Once you scoop out your dough, roll the balls in your hands to make them smooth. You can place them on parchment or wax paper as you roll them.

  • 1 1/4 cups old fashioned rolled oats
  • 1 ⁄2 cup peanut butter
  • 1 ⁄2 cup semisweet chocolate chips
  • 1 tbsp ground flaxseed
  • 1 tbsp chia seeds
  • 1 ⁄3 cup honey
  • 1 tsp vanilla

  2. My DIL brought very similar ones along for the road trip to Hilton Head last year in their cooler. When she arrived, she formed into balls for all of us to take along to the beach and state park. They were a huge hit. Glad for the recipe.

    Used sunflower seed peanut butter which gave it a unique taste. Should have chopped chocolate chips because they were not minis. Excellent recipe. Going to make another batch today and add coconut. Will cut back on honey because the coconut is sweetened.
