What is Lasagna Soup?

Lasagna soup is a twist on the traditional lasagna but in the form of a hearty soup. This soup is made with gluten free lasagna noodles and without cheese, making it dairy free too!

With a cook time of under 30 minutes and without the extensive prep work of the classic lasagna dish, this one-pot lasagna soup is truly simpler and more convenient to make. It also makes delicious leftovers for the next day!

Ingredients in Dairy Free Lasagna Soup

You’ll notice that the ingredients in this lasagna soup are similar to the ones needed for classic lasagna. Simple and quality made ingredients are key to a successful lasagna soup.

  • Olive oil: for sautéing the onion and garlic.
  • Ground beef and ground Italian pork: I think the 1:1 beef to pork ratio gives the most flavor to the soup. You can omit the italian pork and use a total of 1 pound of ground beef instead if desired.
  • Onion
  • Garlic
  • Marinara sauce: I like to use Rao’s Homemade Marinara Sauce.
  • Diced tomatoes: Include the juices from the canned diced tomatoes when adding it to the soup. Alternatively, you can use fresh diced tomatoes.
  • Low sodium chicken broth: I prefer to use low sodium broth so I can control the amount of salt that is added.
  • Gluten free lasagna noodles: There are a few brands that make gluten free lasagna noodles. I’ve personally tried Jovial and Tinkyada, which have both tasted great in this lasagna soup.
  • Spinach: You can omit the spinach if you want but it’s a great way to add some greens to your meal.
  • Italian seasoning: You can use premixed Italian seasoning or mix your own.
  • Red pepper flakes: The red pepper flakes are optional but add a nice spice kick to the soup.
  • Sea salt and pepper: Taste and adjust the amounts based on preference.
  • Optional: dairy free ricotta cheese or cottage cheese if you can tolerate dairy.

How to Make Gluten Free Dairy Free Lasagna Soup

First add the olive oil to a large stock pot or dutch oven. Sauté the onion and garlic until fragrant and onions turn translucent. Add the ground beef and Italian sausage. Cook until browned and meat is cooked through. Drain any excess fat.

Add the marinara sauce, diced tomatoes, broth, Italian seasoning, red pepper flakes (if using), salt, and pepper. Stir and bring to a boil.

Reduce the heat to simmer and add the broken lasagna noodles. Let simmer for about 15 minutes or until the noodles are done.

Before serving, add the spinach and let it wilt. Taste and adjust the amounts of spices and broth if needed. Serve with ricotta cheese or cottage cheese if desired.

Tips and Substitutions

  • Spicy - If you want to make spicy lasagna soup, add red pepper flakes.
  • Extra broth - The noodles tend to soak up the broth as it is stored in the fridge. Feel free to add extra broth before reheating the soup if needed.
  • Pasta - If you can't find gluten free lasagna noodles, you can use any pasta you want instead.

Storage

Store any leftover lasagna soup in an airtight container in the refrigerator for up to 5 days. Remember to add more broth when reheating the soup, if desired.
