Valetine’s Day is one of my favorite holidays of the year! From the pretty colors to the love in the air… what better way to celebrate it than adding Valentine’s Day Strawberry Cream Popsicles to a fancy homemade dinner.

These Valentine’s Day Strawberry Cream Popsicles are the perfect combination of sweet and sour, creamy and smooth.

They’re also fun to make and decorate so be sure to add them to your Valentine’s, or Galentine’s, day celebration!

The inspiration for this recipe actually came from a dessert recipe my dad’s grandparents made for him when he was little. This was in rural Ukraine, so the ingredients and recipes there were always simple with accessible ingredients that people can find in their home gardens.

Sour cream is a staple in Ukrainian cuisine. We like adding it to pretty much majority of our dishes. From Borshch and potato pancakes to icing on cake… sour cream is a big deal in Ukraine! And in this recipe’s case, it’s the base ingredient for these popsicles.

Ingredients

For Valentine’s Day Strawberry Cream Popsicles, you’ll need sour cream, milk, sugar and strawberries. That’s it!

Now if you want to decorate your popsicles, you can use chocolate (white, milk, dark all work well), sprinkles, cookie crumbs, etc.

16 oz sour cream: When choosing sour cream, opt for a full fat sour cream. This will help with maintaining the thick consistency of the popsicles. I wouldn’t swap sour cream with yogurt because of the difference in consistencies and fat levels.

Side note: Sour cream is the key ingredient in making these popsicles as creamy and balanced as possible. The sourness of the cream combined with the sweetness of the sugar creates a deliciously balanced flavor.

1/4 cup sugar: Fine cane sugar is perfect for this recipe because it mixes easier and dissolves well through the cream.

8 oz strawberries: For this recipe, you will need to blend the strawberries into a fine puree. Prior to blending, remove the leaves and cut off the hard part near the stem. Don’t skip this part! We don’t want a chunky popsicle!

whole milk: The milk is mainly used to help blend the strawberries. You can eyeball it and add just enough to help blend them into a puree. But generally, just add about 1/8 a cup to the blender.

1/2 cup dark chocolate chips: This ingredient is optional. It’s mainly here for decorative purposes. You can substitute the dark chocolate chips to white or milk chocolate if you’d like.

How to make:

Wash the strawberries and dry them. Cut off the stem and the hard white park near the stem. Cut the strawberries into small chunks so that they blend better.

Put them in a blender and add a little bit of milk (about 1/8 cup). Blend until the mixture forms a smooth puree.

In a large bowl, combine the strawberry puree, sugar and sour cream. Mix until it is smooth.

Transfer the strawberry cream mixture into a silicone popsicle mold (I like these on Amazon). Cover with the lid and put in the popsicle sticks.

Put in the freezer for about 12-24 hours. Once they are completely frozen you can eat them as is or you can decorate them with chocolate!

Melt 1/2 cup of dark chocolate chips in the microwave in 30 second intervals.

Important note: Stir the chocolate in between each microwave session to prevent the chocolate from overheating and hardening. Sometimes, the chocolate chips still hold their shape while hot but if stirred, they will turn into liquid form.

Once the chocolate is melted, leave it to cool to room temperature.

Only take out the popsicles out of the freezer when you are ready to dip them into the chocolate. If they are not fully frozen, the chocolate will not stick to them as good.

Leave the chocolate covered popsicles in the fridge to harden and enjoy!

  • 1 Popsicle mold

  • 10 Wooden popsicle sticks

Ingredients

  • 16 oz sour cream full fat
  • 1/4 cup fine cane sugar
  • 8 oz strawberries
  • 1/8 cup whole milk
  • 1/2 cup dark chocolate chips optional

Instructions

Make Popsicles

  • Wash the strawberries and cut off the stems.

  • Chop the strawberries into small chunks and blend in high with the milk until a puree forms.

  • Combine the strawberry puree, sugar and sour cream and mix until smooth.

  • Transfer to a silicone popsicle mold and freeze for 12-24 hours.

Decorate with Chocolate

  • Melt dark chocolate chips in the microwave in 30 second intervals, stirring in between each interval.

  • Once melted, leave the chocolate to cool to room temperature.

  • Remove the popsicles from the freezer and dip inside the melted chocolate.
